Fingerling Potatoes with Fresh Parsley & Chives

Ingredients
  • 2 pounds fingerling potatoes
  • 1/4 cup extra-virgin olive oil
  • 1/2 teaspoon Goya Sazon without annatto
  • 1/2 teaspoon adobo seasoning
  • 2 tablespoons minced fresh parsley
  • 2 tablespoons minced chives
Directions
  • Step 1 Place potatoes in a 6 quart stockpot.
  • Step 2 Add water to cover.
  • Step 3 Bring to a boil.
  • Step 4 Reduce heat.
  • Step 5 Cook, uncovered, 15-20 minutes or until tender.
  • Step 6 Drain.
  • Step 7 In a large bowl, combine olive oil and seasonings.
  • Step 8 Reserve 1 tablespoon.
  • Step 9 Add potatoes.
  • Step 10 Toss to coat.
  • Step 11 Let stand 15 minutes.
  • Step 12 Thread potatoes onto 4 metal or soaked wooden skewers.
  • Step 13 Grill, covered, over medium heat 8-10 minutes or until browned, turning once.
  • Step 14 Cool slightly.
  • Step 15 Remove potatoes from skewers.
  • Step 16 Transfer potatoes to a large bowl.
  • Step 17 Add reserved marinade and herbs.
  • Step 18 Toss to coat.
