Fingerling Potatoes with Fresh Parsley & Chives

Ingredients
- 2 pounds fingerling potatoes
- 1/4 cup extra-virgin olive oil
- 1/2 teaspoon Goya Sazon without annatto
- 1/2 teaspoon adobo seasoning
- 2 tablespoons minced fresh parsley
- 2 tablespoons minced chives
Directions
- Step 1 Place potatoes in a 6 quart stockpot.
- Step 2 Add water to cover.
- Step 3 Bring to a boil.
- Step 4 Reduce heat.
- Step 5 Cook, uncovered, 15-20 minutes or until tender.
- Step 6 Drain.
- Step 7 In a large bowl, combine olive oil and seasonings.
- Step 8 Reserve 1 tablespoon.
- Step 9 Add potatoes.
- Step 10 Toss to coat.
- Step 11 Let stand 15 minutes.
- Step 12 Thread potatoes onto 4 metal or soaked wooden skewers.
- Step 13 Grill, covered, over medium heat 8-10 minutes or until browned, turning once.
- Step 14 Cool slightly.
- Step 15 Remove potatoes from skewers.
- Step 16 Transfer potatoes to a large bowl.
- Step 17 Add reserved marinade and herbs.
- Step 18 Toss to coat.
