Arugula Mushroom Parmesan Salad

Ingredients
  • Salad Ingredients:
  • 1 Bushel Fresh Wild Arugula (Roquette)
  • 3/4 Cup sliced mushrooms (I prefer King Oyster)
  • Pinch of salt
  • Shaved aged parmesan cheese (for the finish)
  • Dressing ingredients:
  • 1 teaspoon distilled white vinegar
  • 1/4 cup lemon juice
  • 3/4 cup olive oil (EVOO)
  • 1 tablespoon chopped shallots
  • 6-8 mint leaves (torn)
  • 1/4 teaspoon salt
  • 1/2 teaspoon sugar
  • Pinch of black pepper
Directions
  • Step 1 Toss arugula and mushrooms to taste with dressing, and finish with shaved parmesan cheese.
