Ingredients
  • 2 (15.5-ounce) cans no-salt-added chickpeas (garbanzo beans), rinsed and drained
  • 2 garlic cloves, crushed
  • 1/2 cup water
  • 1/4 cup tahini (sesame seed paste)
  • 3 tablespoons fresh lemon juice
  • 2 tablespoons extra-virgin olive oil
  • 3/4 teaspoon kosher salt
  • 1/4 teaspoon black pepper
Directions
  • Step 1 Place beans and garlic in a food processor.
  • Step 2 Pulse 5 times or until chopped.
  • Step 3 Add 1/2 cup water and remaining ingredients.
  • Step 4 Pulse until smooth, scraping down sides as needed.
  • Step 5 Feta-Baked Hummus: Combine Traditional Hummus, 1/2 cup (2 ounces) crumbled feta cheese, 1/4 cup chopped fresh parsley, and 1/2 teaspoon ground cumin.
  • Step 6 Transfer mixture to an 8-inch square baking dish coated with cooking spray.
  • Step 7 Sprinkle with 1/2 cup (2 ounces) crumbled feta cheese.
  • Step 8 Bake at 400 degrees F. for 25 minutes or until lightly browned.
  • Step 9 Garnish with parsley sprigs.
  • Step 10 Servings: 4 cups
  • Step 11 White Bean and Roasted Garlic Hummus: Since this variation calls for roasted garlic, you can just omit the raw crushed garlic cloves from the Traditional Hummus.
  • Step 12 Remove white papery skin from 2 whole garlic heads (do not peel or separate the cloves).
  • Step 13 Wrap each head separately in foil.
  • Step 14 Bake at 350 degrees F. for 1 hour.
  • Step 15 Cool 10 minutes. Separate cloves.
  • Step 16 Squeeze to extract garlic pulp.
  • Step 17 Discard skins.
  • Step 18 Place garlic pulp, Traditional Hummus, and 1 (15-ounce) can rinsed and drained cannellini beans (or other white beans) in a food processor.
  • Step 19 Pulse 5 times or until chopped.
  • Step 20 Add 1/4 cup water.
  • Step 21 Process until smooth, scraping down sides as needed.
  • Step 22 Stir in 3/4 teaspoon chopped fresh rosemary.
  • Step 23 Servings: 5 cups
  • Step 24 Spicy Red Pepper Hummus: Cut 2 red bell peppers in half lengthwise.
  • Step 25 Discard seeds and membranes.
  • Step 26 Place pepper halves, skin sides up, on a foil-lined baking sheet.
  • Step 27 Flatten with hand.
  • Step 28 Broil 15 minutes or until blackened.
  • Step 29 Place in a zip-top plastic bag.
  • Step 30 Seal.
  • Step 31 Let stand 10 minutes.
  • Step 32 Peel and cut into strips.
  • Step 33 Combine bell peppers, 2 teaspoons chile paste with garlic, 1/2 teaspoon paprika, and 1/8 teaspoon ground red pepper in a food processor.
  • Step 34 Pulse until smooth.
  • Step 35 Transfer pepper mixture to a serving bowl.
  • Step 36 Stir in Traditional Hummus.
  • Step 37 Servings: 4 cups
